Cod cooked at low temperature with creamy Canarian potato
and citric pil-pil foam.

Black pork baozi, celery-coconut textures and white chocolate with demi-glace sauce.



DESSERTS

Coconut and white chocolate cream, infused with kaffir lime, raspberry sorbet and caramelized soya.

Coffee and hazelnut bonbon, crème anglaise lightly infused with oranges.
